Coconut frosting Cupcakes (Easter version)
Inspired by the lovely Rebecca's recipe
-120gr of flour
-1 egg + 1 white
-120gr of sugar
-100gr of butter
-a pinch of salt
-10g of vanilla-flavoured baking powder/baking soda
-vanilla powder to taste
-2 tablespoon of dessicated shredded coconut
(If the mixture is too thick add a splash of milk or a tablespoon or white yogurt, if it so too runny add a tablespoon of flour)
Ingredients for the coconut frosting:
-2 egg yolks
-30gr(to taste actually) of sugar
-100gr of butter (room temperature)
-a dash of milk (dairy or plant)
-15gr of flour
-a pinch of vanilla powder
-a pinch of salt
-75gr of dessicated shredded coconut
(Additional: mini chocolate eggs)
For the cupcakes:
Preheat the oven to 180 degrees.
Mix first the sugar with the butter until it becames creamy, then add the eggs, the salt, the vanilla powder, the coconut and, at the end, little by little, start adding the sifted flour and baking powder/soda. Make sure to mix everything well with the whip.
Pour the mixture in the cupcake baking cups(I also used the cupcake tray, because it is easier and a bit less messy) and throw them in the oven for about 15 minutes, or until a toothpick inserted comes out clean.
When they are ready, let them cool down outside the oven.
For the frosting:
In a heat proof bowl whisk well the eggs, then add the sugar and whisk again, until the mixture becomes creamy and "fluffy"(can I say fluffy for food?). Add a dash of milk and whisk again.
Time to place the mixture over a pot which contains boiling water, so the mixture will warm up without touching the fire, add the flour and stir continuously 'till it becomes creamy and thick.
Place your bown over some cold water in order to make it cool down. When the mixture is cold, whisk it again adding vanilla powder and salt.
Now the frosting should be creamy and quite thick. You can put it inside a piping bag or you can place the frosting on the cold cupcakes with a spoon.
Once you have covered your cupcakes with the frosting, sprinkle them with the shredded coconut and add the chocolate eggs.
Belive me or not, but I think that this cupcake recipe is one of my favourite. They turned out so soft and the cream is delicious, not even too sugary!

Last week spring arrived but the weather still not changed. I am so tired about these downpours, where is hiding the sun?
Luckily we can still dream about warmer, tights-less and blooming days.

La settimana scorsa è finalmente arrivata la primavera, anche se il tempo non sembra esser d'accordo, visto i continui acquazzoni, ma dove si nasconde 'sto sole?
Fortunatamente nessuno ci impedisce di sognare le tiepide giornatine di sole, quando finalmente si può rinunciare ad indossare le calze.

Daniel Wellington watch: I have been looking at it for ages and I think that it is so simple, timeless and aesthetic. Plus, thank to the interchangeable straps, it can match every outfit.
Lo sto scrutando da tantissimo tempo e lo trovo un accessorio semplice, senza tempo e decisamente estetico. E poi, grazie ai cinturini intercambiabili, lo si può abbinare ad ogni outfit.
Zara sandals: They look very nice and I would love to match them with longuette skirts or culotte but they will stay forever just a wish. They are too high for my balanceless body, sigh.
Li trovo molto carini e, se li avessi, mi piacerebbe abbinarli con delle gonne longuette o delle culotte. Purtroppo rimarranno per sempre un sogno, sono troppo alti per una persona con così poco equilibrio, sigh.
Whistles culottes: This hybrid, this mixture between skirt and trousers, is really appealing. I would absolutely buy it if I didn't have to go to school. I think that they match better a workplace. Maybe next year?
Questo ibride, questa mescolanza tra gonna e pantalone è molto interessante. La comprerei subito se solo non dovessi andare a scuola. Infatti credo che sia perfetta solo in un ambiente più maturo e legato al mondo lavorativo. Magari l'anno prossimo?
Dior nailpolish: I love basic, nude colours, they are the prettiest. Anyway, the colour is perfect for springtime, as a good transition between the darker-wintry colours and the colorful-summery colours. And I think Dior quality is really good, but you can always find a similiar colour at the drugstore, I suppose.
Adoro i colori basic e nude, li trovo tra i più belli in assoluto. Comunque questo colore sia perfetto per la primavera, in quanto è un'ottima transizione tra i colori scuri invernali e quelli più accesi, tipici dell'estate. Penso che i prodotti Dior siano di ottima qualità, ma comunque potrete trovare qualcosa di simile pure a basso prezzo.

Chit-chatting on movies
Probably you don't know it, but I am a huge of John Green's books. If you don't know who is he, just think about "The Fault in Our Stars", you must had heard something about it.
Anyway, his books always can hit me right in the feels, partly because they talk about common teen-aged experiences which sometimes turn sad, and partly because John can express ideas with the right words.
If you too are a fan or you are following the news about cinema, the other day the "Paper Town" trailer came out, I can't you how curious I was about it, especially because of the cast. Cara Delevingne and Nat Wolff are the main actors, respectively Margo and Quentin in the fictional story.
Some time ago I read the book and I found it really pleasant, particularly when it is described the "revenge night" and the trip made by Q and his friends and I am really interested to know how it came out on film.
Forse non lo sapete, ma sono una grande fan dei libri di John Green. Se non sai chi è, pensa soltanto a "Colpa delle Stelle", è impossibilie che non l'abbiate mai sentito nominare.
Comunque, i suoi libri riescono sempre a coinvolgermi ed ad emozionarmi, in parte perché parlano di comuni storie adolescenziali che spesso finiscono in un modo triste, e parte perché John sa esprimere le sue idee con le giuste parole.
Se anche tu sei un fan o segui le news sul cinema, l'altro giorno è uscito il trailer di "Paper Town" e non potete immaginare quanto curiosa ero di vederlo, specie riguardo al cast. Cara Delevingne e Nat Wolff sono gli attori principali, rispettivamente Margo e Quentin nella storia.
Qualche tempo fa ho letto il libro e l'ho trovato molto piacevole, particolarmente quando descrive "la notte della vendetta" e il viaggio fatto da Q e i suoi amici e non vedo l'ora di scoprire come si svolgono le scene nel film.
I won't tell you the plot, just in case you are attracted by the trailer(which, in my opinion, gives away enough about the story) and you want to buy/download the book.
Non vi dico la trama, giusto in caso siate interessati dal trailer(il quale, a mio parere, mostra un po' troppo riguardo la storia) e vogliate comprare/scaricare il libro.
